Research supporting the role of lean beef in a healthy diet is strong. In fact, a recent randomized controlled clinical trial demonstrated that a heart-healthy diet including lean beef every day was just as effective at lowering cholesterol as traditional heart-healthy diets.
This is just the latest addition to the growing body of evidence pointing to the benefits of adding lean beef to a heart-healthy diet, including a recent review of 20 studies concluding that red meat consumption is not associated with increased heart disease risk.

About the speakers:
Penny Kris-Etherton, PhD, RD Dr. Kris-Etherton is a Distinguished Professor of Nutrition and ADA Plan V Program Director at The Pennsylvania State University. She has served on many national committees and review panels including the National Academy of Sciences Panel on Macronutrients, the American Heart Association Nutrition Committee, NIH's Nutrition Study Section, the National Cholesterol Education Program Second Adult Treatment Panel, the ASCN/AIN Task Force on Trans Fatty Acids, and WomenHeart.
Joanne Slavin, PhD, RD Dr. Joanne Slavin is a professor in the Department of Food Science and Nutrition at the University of Minnesota and served on the 2010 Dietary Guidelines Advisory Committee. She teaches classes in nutrition and has presented more than 250 invited scientific lectures on nutrition topics including sports nutrition, dietary fiber, phytoestrogens, whole grains and the role of diet in disease prevention.
Betsy Hornick, MS, RD Betsy A. Hornick, MS, RD, is a registered dietitian and an experienced writer, editor and educator specializing in food, nutrition and health communications. She writes a bimonthly column for Diabetic Cooking magazine and was the author of The Weight-Loss Bible and co-author of The Healthy Beef Cookbook.
